healthy lifestyle has benefits for our skin, hair and our overall well-being. That’s why I wanted to introduce you to one of my most loved recipes for a healthy breakfast. Egg muffins are high in protein and a true vitamin source, if you add vegetables. It is filling as well as delicious. I tend to make them in bulk to ensure both my boyfriend and me a healthy alternative for busy mornings.

For 6 servings you’ll need:

6 whole eggs

Turkey breast slices

Baby spinach

20g of light mozzarella cheese

49g of diced tomatoes and onions (feel free to opt for carrots)

Directions to cook:

Pre-heat your oven to 180°C. Stir-fry your baby spinach, tomatoes and onions for five minutes, then add the turkey breast and let it cook. Meanwhile mix up your eggs and season to your liking. Spray PAM anti-sticking spray on your muffin tray to prevent the muffins sticking to your pan in the end. Distribute the mixture of veggies and turkey breast into the tray and cover it with the eggs. Then sprinkle grated cheese on top.

Let them bake for 10 minutes and either serve them all at once or roll them up into tin foil and place them in your fridge.

You can put your already frozen muffins in the microwave to prepare them for a quick breakfast or snack by the way.
