Minimalism is often linked to cleansing and detoxifying and believe it or not, watercress is one of the best greens to instantly detoxify your system after – let’s say- a rough night out. The reason for that is the high level of vitamins A and C that is hidden in the peppery green as well as iron and fiber.
Here’s a quick recipe for a fresh and hot bowl of watercress soup to reboot your entire system.
INGREDIENTS
1 tbsp. olive oil
3 garlic cloves, thinly sliced
1 large potato, peeled and cut into dices (2 cups)
1 tsp. salt
3 cups chicken stock
2 bunches watercress, coarsely chopped
Pepper
Lemon wedges, for serving
DIRECTIONS
- Heat a medium saucepan over medium-high heat. Add oil and garlic, and cook about 1 minute. Add in potatoes and 1/2 teaspoon salt. Cook 1 minute.
- Add stock and 1 1/2 cups of water, and wait until it’s boiled. Reduce to a simmer, and cook for 5 minutes.
- Stir in watercress. Return to a boil. Reduce to a simmer for 1 minute. Season with salt and pepper.
Pour and serve it in soup bowls, add a lemon wedge into each bowl.
