Yesterday I found an article which says the research lab of Hampton Creek Foods is trying to produce a kind of chicken egg replacement completely made of vegetable substances.

The researchers were looking for plants whose molecular structure matches the one of eggs. Of more than 1500 investigated plants beans were inter alia qualified. You probably have already heard of a product which is called „No Egg“ which is an egg replacement powder already available in grocery stores. The difference between the two products is the following issue: While No Egg can merely be used for baking and sauces, you can implement typical egg recipes such as scrambled eggs or fried eggs with the help of the artificial egg which is being developed.

The production of vegetal eggs would be many times cheaper than the operation of chicken farms, also a contagion of chicken flu would be out of question. One product which is based on the artificial egg substance already is available in grocery stores. “Just Mayo“ is the name of the egg-free mayonnaise. You can buy it in health food stores.
